Just bought myself a Martin 00X1 acoustic guitar…?

If I look after it well keeping it in mint condition for years to come will it depreciate in price?

It could (possibly) retain its value. But generally, every asset depreciates (as of the minute you walk out of the store with it).

Now, if you become famous like Eric Clapton or one of the Beatles or Jimi Hendrix, then that guitar will sell for tons more than you paid for it.

But you’ll already be rich at that point, and like Clapton you would donate it to a charity where it would be auctioned off to help reduce your taxes.
